French Bistro with outdoor patio proposed for Main Street East in Huntsville

A French Bistro with an outdoor patio has been proposed for the south side of a building at 42 Main Street East in Huntsville.

Shawn Carr, one of the owners of the new bistro, appeared before council on Dec. 10 to present the planned redesign for the property.

“I think we can show that we can make a significant improvement to the space and create even more vibrancy in that area with more people,” said Carr. “That’s obviously the biggest goal, to have more and more people downtown.”

Carr said the restaurant will be called Le Bouchon Bistro and Wine, and it will be modelled after the 1886 Lake House Bistro in Callander.

“It’ll be a seasonal patio accommodating approximately 50 seasonal seats,” said Carr, who added that capacity could reach nearly 70 seats if their application for a front patio is also approved.

According to Carr, the design of the patio aligns with the existing Downtown Official Community Plan framework, and the expanded seating area will increase sales and support the sustainability of a year-round business.

He said the patio will feature native shrubs and Muskoka rock, with height increasing along the rising grade.

Carr said the new business will create around 10 seasonal jobs.

If everything goes according to plan, the bistro is expected to open in April.
